Do you know what Panel Test is?

The Panel test is an international method of COI (International Olive Council) for the organoleptic evaluation of oil, recognized by MIPAAF.

It is carried out by a group of professionals, the Panel group, who have obtained the title of professional taster, led by a leader, Panel leader, in special tasting rooms.

This test allows us not only to classify the oil as extra virgin, but to recognize not only any defects but also its merits, understood as attributes:

  • Fruity
  • Bitter
  • Spicy

Together with chemical analyses, this test gives us further guarantee and awareness of the product we are consuming.

FRUITY indicates the “perfume” of the oil: it can remind us, for example, of the smell of freshly cut grass, artichoke, green apple, tomato leaf.

BITTER and SPICY give indications, among other things, on the method of processing the olives and on the quantity of polyphenols present in the oil. Therefore, they should not be considered negative aspects, on the contrary, they are absolutely advantages.
